Creamy Feta Dressing made with Greek yogurt is a healthy way to dress up your salad. I do love mayo. Mayo is probably one of my favorite foods, but I know it’s best not to indulge myself too frequently. There’s nothing like garlicky aioli with roasted vegetables. However, when I’m eating raw vegetables, whether in a salad bowl or cut up as crudité, I opt for yogurt rather than mayo as the base for my creamy salad dressings and vegetable dips.

But some yogurt-based dressings and dips just aren’t rich enough for my liking. Feta adds not only body, but also a saltiness that complements the tang of the yogurt. The lemon, dill, and garlic are lively components that add freshness. Nothing fancy here, but it works.


Creamy Feta Dressing

Ingredients

  • 1 clove garlic
  • 1 cup crumbled feta
  • 1/2 cup Greek yogurt
  • 1 T olive oil
  • 1 T lemon juice
  • 1/2 t salt
  • 1/2 t black pepper
  • 1 heaping T fresh dill (use less if you're using dried dill)

Instructions

  • Process the garlic – Give the clove a rough chop, then drop the pieces into your food processor one at a time with the machine running. Continue processing until the garlic stops bouncing around the bowl. Scrape down the sides of the bowl.
  • Blend – Add the remaining ingredients to the bowl, and process until very smooth and creamy.

Notes

If you’re using dried dill in lieu of fresh, try to make this dressing a few hours in advance to allow the flavors to meld.

INGREDIENT NOTE: Creamy Feta Dressing is also a good way to turn dry, unappealing feta into something creamy and light. I’ve been having trouble lately finding good creamy feta cheese packed in brine. I could drive to the Coop or a specialty cheese shop, but it’s hard for me to justify the time and expense, unless I need it for something where it stands alone. So, I frequently settle for the crumbled feta I find at BigY and BJ’s, and tuck it in where I can – folded into a bowl of warm rice, tossed with pasta and roasted tomatoes, added to quiches, mixed into Puffed Up Greens, and of course, in Creamy Feta Dressing.
