Give thanks for Leftover Thanksgiving Turkey, a happy bonus for whomever hosts Thanksgiving dinner. Eating a turkey sandwich with stuffing and cranberry sauce in the afterglow of the event is so comforting. Depending on how early in the day you serve the main meal, you may even have a turkey sandwich that very evening.
But that’s not all you can do with leftover Thanksgiving turkey! Here are a few other delectable ideas –
Of course, when you’re tired of sandwiches, you’ll turn to turkey soup. Turkey soup is a nice break from the surfeit of the Thanksgiving feast. It’s healthy; it’s light. Toward this end, I offer you a recipe for Turkey Soup with Pappardelle! You could use any type of pasta, of course. But if you’re a sourdough baker, and you haven’t made Sourdough Pasta, you’re in for a treat. Pappardelle are short wide pasta ribbons, and they add a luxuriousness to your turkey soup like you’ve never experienced. Sourdough pasta puffs a bit when it cooks. It’s pillowy, it’s silky, and it loves canoodling in the broth with carrots, celery and of course, shredded turkey.
But what then? What’s next? How about something comforting that prolongs that warm feeling that Thanksgiving brings? This recipe was shared with me by the mother of an old friend. She was from Scotland, and she loved meat pies and scones. She also loved to serve Turkey Croquettes, using leftover Thanksgiving turkey. They’re very creamy and satisfying – the definition of comfort. You’ll want to serve some steamed broccoli along side your Turkey Croquettes, for good measure.
By now, you’re probably over it – paunchy potatoes, puffy pasta, stuffing scented with sage. If you still have leftover turkey, why not try something with decidedly different flavors – cumin and cardamon and cinnamon? Turkey Biryani is exciting and different. Still comforting, still warming with the lovely spices, still creamy with the cooling yogurt…, but very different. Your kitchen will smell incredible!
TURKEY ENCHILADAS WITH TOMATILLO SALSA
Finally, I always prepare Turkey Enchiladas with Tomatillo Salsa after Thanksgiving. This recipe was originally posted last year, but I’ve modified it to include poblano peppers – the smoky heat really works well with turkey and the Tomatillo Salsa. Ron loves it when I serve this dish after the holiday. I think you’d love it too!
