This Cajun Seasoning spice mix will wake up your taste buds – the 6:00 a.m. alarm when you didn’t get to bed until after 2:00. Look alive! I call this Cajun Seasoning, but I lay no claim to authenticity. I’ve googled What’s the difference between Cajun and Creole seasoning?, and this is what I learned –
Well, this spice blend is punchy and hot, with a pronounced herbal background, so this spice blend is really a mongrel. I think Cajun sounds much better though.
I use this Cajun Seasoning in my Yogurt Remoulade sauce, but it’s useful in so many other ways. I use it as a dry rub on chicken. If I’m looking for blackening seasoning, say for pork chops, I just add some brown sugar. You could also use it as a marinade by simply stirring in some olive oil. This recipe makes quite a bit, but it’s so pungent and versatile, I think you’ll find ways to use it up. Enjoy!
