This is a fantastic savory crust. A bit crumbly, but perfect for cheesy vegetable pies.
Masa Harina Crust
Ingredients
- 1 1/2 cups masa harina
- 1 t salt
- 1/2 t garlic powder
- 1 t cumin
- 2 T butter
- 1 1/2 cups water
Instructions
- Preheat the oven and combine the dry ingredients – Preheat the oven to 400℉, convection bake setting. Whisk the masa, salt, garlic powder, and cumin together in a bowl.
- Make the dough – Microwave the water and butter together until the butter melts. (I use a pyrex glass measuring cup.) Stir into the dry ingredients and mix until the masa is fully hydrated. It will feel like playdough. If it's sticky at all, add more masa, 1 T at a time, until you have a smooth and not sticky consistency.
- Form the crust – pat the dough into a 9" pie plate and crimp the edges. Using a fork, prick the crust across the bottom and around the sides to keep the crust from puffing up.
- Parbake – Bake in the preheated oven for 16 minutes.

Note: this is a tasty, but ugly, crust. I’ve been reviewing similar recipes, and some people add baking powder, some people add an egg. I’m still experimenting.
