It’s great to have these tasty Cheddar Quinoa Bites available for snacking. I mean, if you’re going to snack, why not snack on something tasty that’s filled with vegetables and fiber? Your belly will thank you.
I’ve used broccoli in this recipe, but of course you could substitute with any other veg or type of cheese, in any combination to your liking, and/or add some diced ham. I’ve made these with cauliflower, pepper jack cheese, and bacon. Fantastic!
Cheddar Quinoa Bites
Servings: 18 bites (standard size muffin tin)
Ingredients
- ¾ cup quinoa
- 2 cups broccoli
- 2 cups cheddar cheese shredded
- 2 eggs
- 2 T Dijon mustard
- salt to taste
- pepper to taste
- cayenne to taste
Instructions
- Preheat the oven; cook the quinoa; cook the broccoli – Preheat the oven to 350 ℉, convection bake setting. Cook the quinoa according to the package instructions. Let cool. Steam the broccoli until soft and chop into small pieces. Let cool.
- Mix and shape – Beat the 2 eggs with 2 T Dijon mustard to emulsify. Combine the quinoa and the egg mixture with the remaining ingredients. Spoon into cupcake liners in either mini or standard muffin pans.
- Bake – Bake until lightly golden brown on top, about 25 minutes if using mini muffin pans, or about 30 minutes if using standard size muffin pans.
