RECOVERED RECIPE (Savory Cherry Tomato Jam, originally posted September 11, 2024) –
As many of you know, I lost the prior eleven months of melinmac cooks posts in September 2024, and I’m now trying to rebuild what I’ve lost. This is one of those posts. Luckily I saved all of the pictures on my hard drive, but the content of the lost posts, including recipes, are not recoverable. At this point I’m not trying to recreate anything more than the recipes with pictures. Hopefully I’ll build it all back over time. Thanks for being here!
Savory Cherry Tomato Jam
Ingredients
- 10 to 14 ounces cherry tomatoes
- 4 t whole grain mustard
- 1 t honey
- 1 t dried oregano
- 1 t white miso paste
- ¼ t black pepper
Instructions
- Broil the tomatoes – Halve the cherry tomatoes, cutting through the stem end from top to bottom. Arrange on a baking sheet, cut side down, and broil for about 3 minutes, until slightly charred.
- Combine the other ingredients – In a medium bowl, add the mustard, honey oregano, miso paste, and black pepper. Stir to combine.
- Toss – Toss the broiled tomatoes with the mustard mixture, until evenly distributed.
