Tasty Crab Salad Bites are sweet and tender, a loving way to welcome your guests to the table. They’re delicate and special. And dare I say that they’re light? Well, they’re light if you only eat one or two. But if you’re like me, and if there’s a platter in front of you and only a few people at the table, well let’s just say you may not be hungry for dinner. Crab Salad Bites get your attention, and they keep it.

Buying lump crabmeat can be tricky, and it’s never inexpensive. I’ve tried many different brands, and sometimes the crabmeat is fishy tasting; sometimes it tastes tinny like the can. The idea of juicy, sweet lump crabmeat produces high hopes, but you don’t want to admit, to accept, the reality that it just doesn’t taste as good as you had imagined it would. Of course you could always visit your local fish market and rely on the fish monger’s offerings, but if your choices are limited to grocery store fare, I recommend Chicken of the Sea’s “Special” offering. When I purchased it, I didn’t experience my usual disappointment. I had low expectations, but the crabmeat was surprisingly tender and sweet – fresh and light.

So if you’ve started with good crabmeat you really can’t mess this up. Celery, shallots, and chives. Lemon, mayo, and dill. The perfect flavors and textures in the right proportions serve to enhance the deliciousness of your crab. You really don’t need much mayo. If you’re looking it to keep it as light as possible, you can prepare Crab Salad Bites on cucumber slices, cut on the bias. If you’re looking for something a bit more substantial, a Crab Salad Bite prepared on a crisp cracker is just heavenly.


Crab Salad Bites

Ingredients

  • 1 stalk celery
  • 1 shallot
  • fresh chives
  • 1 lemon
  • ¼ cup mayo
  • 1 pound lump crabmeat
  • fresh dill

Instructions

  • Prep the veg – Trim and finely dice the celery. Peel and mince the shallot. Mince the chives. Zest the lemon. Add celery, shallot, half of the chives, and zest to a medium bowl. Stir in the juice of 1/2 of the lemon.
  • Combine – Add the mayo to the bowl and stir to make a smooth sauce. Add a pinch of salt, to taste. Gently fold in the crab meat. Garnish with the rest of the minced chives and little pieces of fresh dill.
