Prep the veg - Trim and finely dice the celery. Peel and mince the shallot. Mince the chives. Zest the lemon. Add celery, shallot, half of the chives, and zest to a medium bowl. Stir in the juice of 1/2 of the lemon.
Combine - Add the mayo to the bowl and stir to make a smooth sauce. Add a pinch of salt, to taste. Gently fold in the crab meat. Garnish with the rest of the minced chives and little pieces of fresh dill.
