Chorizo, Kale, and Sweet Potato Stew is a perfect fall meal. Stews are always comforting, especially this time of the year, and this one is no exception. We make it over and over again, using the last of the kale from the garden, which has been sweetened by the cooler nights. When it gets dark in the early evening and the wood stove is lit, I love, love, love this stew.

Sweet kale, sweet potatoes, and smoky, rich chorizo, each so distinctive and even better for keeping such good company. Add some tomatoes and garlic and onion into the mix, and you have Chorizo, Kale, and Sweet Potato Stew. It belongs in your kitchen; it belongs in your belly.



Chorizo, Kale, and Sweet Potato Stew
Ingredients
- 1 pound chorizo sausage
- 1 bunch kale
- 2 large sweet potatoes
- 1 large onion
- 4 cloves garlic
- 2 T olive oil
- 2 T sweet paprika
- 2 t curry powder
- t red pepper flakes
- 4 cups chicken broth
- 1 14.5 ounce can diced tomatoes, undrained
- 8 ounces tomato sauce
- 2 T red wine vinegar
- salt and pepper, to taste
Instructions
- Mise en place – Slice the chorizo into quarter-moon shaped pieces. Strip the kale leaves from the stems. Discard the stems and coarsely chop the kale leaves. Trim any blemishes from the sweet potatoes and cut them into medium cubes. Peel and chop the onion. Peel and mince the garlic.
- Create the stew base – Heat olive oil in a large, heavy pot over medium-high heat. Add the chorizo, reduce heat to medium and sauté until almost cooked through and beginning to weep that lovely chorizo goodness. Add the onion and cook until softened. Add garlic, paprika, curry powder, and cayenne and cook briefly until aromatic.
- Build the stew – Add the sweet potatoes, and stir to coat with the spices. Add chicken broth, diced tomatoes, and tomato sauce. Bring to a boil, reduce heat to low, cover with the lid slightly ajar, and simmer 15-20 minutes, or until the sweet potatoes are tender.
- Finish – Add the kale, cover, and cook 5 more minutes until wilted. Add the vinegar and season to taste with salt and black pepper.
